This product is a traditional Chinese Baijiu—specifically a Daqu Light-Aroma Baijiu. It combines millennium-old brewing techniques, including self-made fermentation starters (Daqu) and pit fermentation in clay jars, with fully automated production equipment. Throughout the entire process, grain never contacts the ground, and intelligent robotic systems handle the brewing. The rigorous 155-step process incorporates 152 quality checks to ensure consistent liquor quality.
The raw spirit is aged in clay jars for over three years. During this period, redox reactions occur within the jars, converting harsh compounds like aldehydes into milder components such as alcohols. Simultaneously, ethanol molecules further associate with water molecules, resulting in a spirit that is mellow, smooth, and harmonious.
